- 6 large eggs, hard boiled and cooled
- 52g hummus
- 5g mustard
- Pinch of salt
- Optional: chopped chives & paprika for garnish
Deviled eggs are a great source of protein, often they can come loaded with extra fat thanks to lots of mayo. In our version, we swap the mayo for some store-bought hummus that cuts the fat without compromising creaminess.
- Peel the hard boiled eggs and cut them in half, lengthwise. Scoop out the yolks and add them to a bowl along with the hummus, mustard, and pinch of salt. Stir the mixture until smooth, adjusting mustard and salt levels to your taste. Using a piping bag or a spoon, fill the center of each egg white. Top with a sprinkle of paprika and chopped chives.
