I just discovered this lemon collagen from Vital Proteins (grab yours here!), and I am putting it in everything! Something about summer draws me to anything lemon-flavored, and I wanted a refreshing lemon bubbly drink to sip when it gets hot that can also double as a healthy drink.

Coconut water adds natural electrolytes and minerals, and apple cider vinegar can reduce inflammation, aid digestion, and promote healthy gut bacteria. Collagen gives a nice boost of protein while also being great for your gut, joints, hair, skin, and nails. The bottom line: you get to sip on something delicious while doing something great for your body at the same time!

Recipe Notes:

* Room-temperature coconut water works best. If your liquids are cold the collagen may clump up. Using a blender can help with this, it will just be more foamy.

  1. In a glass at least 12oz in size, add the room-temperature coconut water, apple cider vinegar, and lemon collagen and stir until dissolved.

  2. Add ½ cup of ice and pour in the sparkling water to fill to the top.

  3. Add a lemon slice and some mint leaves to garnish.
