  • 12oz box plant based pasta
  • 8g olive oil
  • 12g garlic cloves, minced
  • 75g sweet onion, diced
  • 275g cherry tomatoes
  • 38g tomato paste
  • 40g sun dried tomatoes
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp oregano
  • ½ tsp red chili flakes
  • 65g spinach
  • 4oz whole milk or heavy cream
  • 20g parmesan cheese, grated

High Protein Marry Me Pasta

Marry Me chicken is one of my favorite meals, so I thought I would do a spin on that using the same ingredients and make a high protein pasta with the sauce instead!

It’s full of Italian flavors and with fresh tomatoes in season right now it seemed like a great summer dish that could be enjoyed hot or cold. I will eat this cold out of the fridge but it can easily be reheated.

Add one of my Air Fryer chicken thighs to the top and you’ve got a complete meal!

Instructions

    Start cooking your pasta per the instructions on the box. Save 1 cup of the pasta water to use later, drain the rest and set the pasta aside.

    In a large skillet over medium heat add olive oil, garlic and onions and saute for 2 minutes until soft.

    Add all your spices, the cherry tomatoes, tomato paste and sun dried tomatoes and stir well. Saute for 5 minutes.

    Turn heat down to medium low and add in the cup of pasta water and the milk/heavy cream. Cook until the tomatoes burst and you get a nice sauce. This takes 5-8 more minutes.

    Add your spinach and stir in until wilted.

    Add your cooked pasta and stir until well coated with the sauce.

    Grate some fresh parmesan cheese over the top to finish and serve!
