  • 35g rolled oats
  • 15g vanilla protein powder
  • ½ tsp baking powder
  • Pinch of salt
  • 120g of milk
  • 15g dark chocolate chips, divided in half

Easy Chocolate Chip Baked Oats

I love oatmeal for breakfast since it is such a filling and high fiber meal. I’ve done overnight oats or big trays of oven baked oatmeal for meal prep,  but really wanted a single serve option that I could whip up in short time.

By blitzing the oats in a blender to make into a flour, this ends up more like vanilla chocolate chip cake. My favorite way to eat it is with Greek yogurt or milk poured over the top for a protein packed punch that tastes like dessert.

Instructions

    Blitz oats in the blender or a coffee bean grinder for 10 seconds to create oat flour. (Or you can just use oat flour if you have that on hand, too!)

    In a standard size serving bowl add oat flour, protein powder, baking powder and salt and whisk together.

    Add milk and half the chocolate chips and whisk again.

    Microwave for 1 minute to cook. Check firmness of mixture and cook another 30 seconds if needed.

    Immediately sprinkle remaining chocolate chips on top so they will start to melt.

    Eat with a spoon while warm, or chop it up and throw some Greek yogurt or milk over the top for even more protein.
