Zucchini Turkey Burgers

Fun fact: Zucchini works great as a binding agent in place of whole eggs. This helps to cut down on fat and increase volume when making burgers. These lean zucchini turkey burgers are perfect for grilling season but bake well in the oven too – Bring on the summer weather! Makes 6 patties Notes Great for the BBQ too!

Ingredients

  • 120g Zucchini
  • 500g Lean Ground Turkey
  • 65g Red Onion
  • 20g bread crumbs
  • 2 tbsp. Sugar Free Ketchup
  • 1 tbsp. dried parsley
  • Salt and Pepper to taste (or other seasoning)

Instructions

  1. Preheat oven to 350 and line a baking sheet with parchment paper
  2. Combine all ingredients until mixed evenly
  3. Portion into 6 and shape into patties using your hands or a burger press
  4. Bake for 18-20 minutes, until cooked through
