Pumpkin Protein Bars

We have another amazing recipe this week from #TeamWAG member, Dusty. If you’re a member of the team, you know Dusty has a big imagination when it comes to making macro-friendly desserts. He creates some really unique cakes, omelets, and brownies on his blog Dusty’s Calculated Madness"! You can also find him on Instagram @the_flexible_baker, where he constantly posts about his creative cakes and love for ice cream. This week’s recipe is geared for the pumpkin enthusiasts and lovers of fall. Dusty has created pumpkin cake bars that are pretty straight forward and easy on the macros. So there you have it. Quick and straight forward recipe to bring some pumpkin back into your life and to help you get ready for fall. Pair this with a delicious cup of coffee, or maybe even some vanilla yogurt! Ingredients

Cake Bars

  • 17 grams whey protein (cinnamon or vanilla)
    • 69 grams egg whites
    • 10 grams brown sugar (Splenda brown sugar used in this recipe)
    • 30 grams self rising flour
    • 15 grams whole wheat flour
    • 6 grams psyllium husk
    • 15 grams coconut flour
    • 14 grams light butter
    • 1 tsp cinnamon
    • 1/2 tsp baking powder
    • 1/8 tsp clove and nutmeg
    • 1-2 ounces of milk
    • 1/3 cup sugar free maple syrup

Frosting

  • 1 ounce cream cheese
    • 15 grams whey (vanilla)
    • A splash of milk (enough to mix ingredients)
    • A splash of pancake syrup (enough to mix ingredients)

Instructions

Cake Bars

  1. Preheat oven to 425 degrees F
  2. In a bowl, mix all ingredients. Sweeten and add spice as you see fit
  3. Line a bread pan with parchment paper and spray with Pam. Pour in batter and evenly spread
  4. Place in the oven for 10-15 minutes. Oven times will vary.

Frosting

  1. Mix all ingredients together and place in fridge until bread is cooled
  2. Place icing on top of bread
