Ingredients

  • 125g of egg whites
  • 5g ½ fat mayo
  • 50g (two slices) of bread of choice
  • splash of lemon juice
  • salt and pepper to taste

Instructions

  1. Place egg whites in microwave safe dish and cook for 1-2 minutes, stirring often. Remove eggs when still slightly moist.
  2. Add in mayo, salt and pepper, and lemon juice.
  3. On toasted bread, place mixture and enjoy!

*A sprinkle of low fat cheese to this dish is a great addition.
